Caprese Salad

Caprese Salad (Pronounced: kaˈpreːze) IS MY FAVORITE!!! YUMMMY! It is a quick, easy and healthy option for a light meal or a quick snack.

Makes 4 servings.  

Ingredients: 
* 6 cups of arugula salad mix. Arugula is a bitter lettuce and is perfect for this salad. 
* 2 cups of basil leaves rolled and sliced. Be very careful basil. It is a delicate herb and easily bruises. It helps to make sure it is completely dry before slicing it. 
* 8 ounce fresh mozzarella ball, large cubed. 
* 2 large tomatoes, large diced. 
* Balsamic vinegar reduction. (Link) 
* Salt and pepper to taste. 

Note: You can also slice both the tomato and mozzarella depending on the “look” you want to achieve. 
Instructions:  

Gather 4 plates and assemble the salad as follows: 
* Lay out 1/4 of the arugula greens as your base on your plate. 
* Lay out 1/4 of the tomatoes on top of the arugula. 
* Lay out 1/4 of the mozzarella on top. 
* Sprinkle each plate with 1/4 of the basil. 
* Drizzle each plate with a tablespoon of the balsamic reduction.
